Sticky Carrot Cake Bites



This is one of my most loved recipes. I changed a regular carrot cake recipe into a sticky version. It's great party food! I always make this cake for my friends or my family during Easter. 
And: it is so easy!

Ingredients for ±20 bites:
- 1 large orange
- 100 grams of hazelnuts
- 1 teaspoon of cinnamon
- 140 ml of sunflower oil 
- 250 grams of sugar 
- 2 eggs
- 250 grams of self-raising flour
- 300 grams of carrots
- 200 grams of cream cheese 
- 50 grams of powdered sugar
- Almonds and white decoration pearls (optional)

Method:

1. Zest and press the orange after cleaning it. Take two tablespoons of the juice and set aside. 

2. Grind the hazelnuts and mix them with the orange juice, zest, sunflower oil, sugar and the eggs. Don't add the juice if you don't want your carrot cake to become sticky. 











3. Mix in the self-raising flour and preheat your oven up to 150 degrees.

4. Start to zest the carrots. It takes quite some time. Add the carrots to the batter.

5. Grease in a brownie baking form. Add the batter to the form and bake the cake for 50 minutes.
Make sure the cake is completely cooled down before adding the icing.












6. Mix the cream cheese, the powdered sugar and the two tablespoons of orange juice. Cover the cake with the icing and decorate with the almonds and the white pearls. The icing doesn't have to be flawless because you're making bite sized treats. Cut the cake in to pieces and enjoy!
